With the beginning of Spring celebrated this week, Brisbane's Aria Restaurant has marked the turning of the seasons with a new lunch menu.
Created by celebrity chef Matt Moran, the Spring 2010 lunch menu, which will begin on September 8, will treat diners with a range of new tastes.
The pricing structure introduced early this year will remain the same - one course at $35 per person, two courses at $55 per person and three courses at $70 per person.
Some of the new signature dishes on the Spring menu include goat curd cigar with pea mousse, caramelised onion and hazelnut dressing; cured ocean trout with cucumber and citrus salad and for dessert, a mango ice cream sandwich with Italian meringue and lime sorbet.
In keeping with Brisbane diners' tastebuds, Aria has kept a number of dishes on the new lunch menu – based on overwhelming demand.
These include the kingfish with spanner crab, avocado, harissa and smoked tea dressing as well as the baked barramundi fillet with baby fennel, saffron potato puree and shellfish sauce.
“Since launching the Autumn menu in May earlier this year, we have been overwhelmed by the response and are thrilled that Brisbane has welcomed us,” Moran says.
“We appreciate the feedback of diners and as a result, we are keeping some signature dishes for the Spring Menu, but of course are introducing some wonderful dishes, new for the Brisbane palate and featuring great local produce,” he says.
